Chocolate Raspberry Cookie Tartlets

My fascination with Christmas cookies started as a child when my elderly neighbor used to bring over a tray of her homemade Christmas cookies every year. I loved the moment where I got to choose a cookie from the beautiful, interesting selection. In my humble opinion, I think a holiday cookie should be something special. It should be something that you don’t eat on a regular basis, maybe because it seems fancy or requires a little extra work to make. Or maybe it has a special meaning or a fond memory. These Chocolate Raspberry Cookie Tartlets check all the boxes for me. They have that something special a cookie needs to be the star of the holiday cookie tray…tender jam-filled chocolate dough, dipped in shiny chocolate with a pretty pop of red.

Chocolate Raspberry Cookie Tartlets

Servings 20 cookies

Ingredients
  

  • 1 ½ cups (6 ounces) powdered sugar
  • cup (1 ounce) unsweetened Dutch process cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup (4 ounces) unsalted butter, softened
  • 3 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups (9 ounces) all purpose flour, sifted
  • ½ cup (5 ounces) raspberry jam or or fruit spread
  • 4 ounces melted semisweet or bittersweet chocolate
  • 1 teaspoon melted coconut oil or vegetable shortening
  • crushed freeze dried raspberries or sprinkles of your choice Optional

Instructions
 

  • In a medium bowl, sift together powdered sugar, cocoa powder, baking powder and salt.
  • In a large bowl, beat butter and cream cheese, with an electric mixer on medium speed, until smooth.
  • Add powdered sugar mixture and beat until well combined.
  • Beat in egg and vanilla until well combined.
  • On low speed, beat in flour just until combined.
  • Divide dough into two equal portions. Wrap with plastic wrap and form into disks. Refrigerate at least two hours or overnight.
  • Preheat oven to 375ºF. Line two baking sheets with parchment paper.
  • Roll dough between two sheets of wax paper to 1/8-inch thickness. Cut dough into 3-inch rounds, re-rolling scraps as necessary. If dough becomes too soft at any point, chill in the refrigerator for 10-15 minutes then continue with recipe.
  • Place rounds on prepared baking sheets. Top each round with a teaspoon of jam.
  • With a small food safe brush or with your finger, apply a small amount of water to the edge of half of each round. Fold over and press edges to seal.
  • Bake until tops of cookies look set, about 9-11 minutes. Transfer cookies to a cooling rack and let cool completely.
  • In a small bowl, mix melted chocolate with coconut oil until smooth.
  • Dip cookies about 1/3 of the way into melted chocolate. Top with freeze dried fruit or sprinkles.

Grandma’s Apple Crumb Cake

Grandma's Apple Crumb Cake

I remember my grandma making coffee cakes and sweet muffins for breakfast, along with eggs, sausages, hot coffee and a big pitcher of milk on the table. Why do most of our grandmothers cook and bake so well? Because they’ve had decades of trial and error to perfect their recipes, tweaking them here and there until they’re approved and loved by their families, neighbors and friends. This cake has had its share of trial and error. She has earned her place as a well-loved, delicious, beautiful queen of coffee cakes.

A classic coffee cake is usually a subtly sweet cake with cinnamon, crumb topping and maybe some icing. They’re called coffee cakes because they go so well with a cup of coffee, not necessarily because they contain coffee. This Apple Crumb Cake has the elements of a classic coffee cake, but so much better! The cake is fluffy and soft, the crumb topping is chunky and plentiful, and the apples are perfectly tender. And don’t get me started about the icing!

Grandma's Apple Crumb Cake

Ingredients
  

Apples

  • 1 tablespoon (14g) butter
  • 3 cups (340g) chopped apples (1/2-inch pieces) Use any combination of your favorite baking apples.
  • 2 tablespoons (25g) sugar
  • ½ teaspoon ground cinnamon

Crumb Topping

  • 1 cup (128g) all purpose flour
  • cup (67g) brown sugar
  • 3 tablespoons (38g) sugar
  • ¼ teaspoon ground cinnamon
  • Scant ¼ teaspoon fine sea salt
  • 6 tablespoons (85g) cold, unsalted butter, cubed

Cake

  • 1 ⅔ cups (213g) all purpose flour, sifted
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) sugar
  • 2 large eggs, room temperature
  • 1 ½ teaspoons pure vanilla extract
  • ½ cup (118ml) whole milk, room temperature
  • cup (75g) sour cream, room temperature

Icing

  • 2 cups (234g) powdered sugar, sifted
  • 2 tablespoons (28g) unsalted butter, melted
  • ½ teaspoon vanilla bean paste or pure vanilla extract
  • 1 pinch fine sea salt
  • 3-4 tablespoons (45-60ml) half & half cream, room temperature

Instructions
 

Apples

  • In a large skillet, melt the butter over medium heat. Add the apples, sugar and cinnamon.
  • Cook, stirring occasionally, until the apples are tender, about 7-10 minutes. Transfer the apples to a bowl and let cool to room temperature.

Crumb Topping

  • In a medium bowl, mix the flour, brown sugar, sugar, cinnamon and salt.
  • Work in the butter with your fingertips until the mixture looks like wet sand with no large pieces of butter remaining. Press together to make 1/2-inch chunks.

Cake

  • Preheat the oven to 325ºF (165ºC). Line a 9-inch cake pan with a removable bottom*, or a 9-inch springform pan, with parchment paper. Wrap the bottom of the cake pan with aluminum foil and place pan on a baking sheet.
  • In a medium bowl, whisk together the flour, baking powder and salt until well blended.
  • In a large bowl, cream the butter and sugar, with an electric mixer on medium speed, until light and fluffy. Beat the eggs and vanilla into the butter mixture in three separate addition, making sure each addition is incorporated before adding the next.
  • In a small bowl, whisk the milk and sour cream together. On low speed, beat the flour mixture into batter in three additions, alternating with milk mixture. Mix just until combined.
  • Transfer the batter to the prepared cake pan. Smooth the top with a spatula. Drain any excess liquid from the apples. Top the cake batter evenly with apples, then the topping mixture.
  • Bake until a toothpick inserted into the center of the cake comes out clean, about 50-60 minutes. Cool the cake in pan for 10 minutes. Remove the cake from pan and transfer it to a cooling rack to cool completely.

Icing

  • In a medium bowl, whisk together the powdered sugar, melted butter, vanilla, salt and 2 tablespoons (30ml) of half & half. Add additional half & half until the desired consistency is reached. Drizzle over the cooled cake.

They’re perfect to pack in a lunch, take on a family picnic or as an addition to a backyard cookout. Everyone who tries these comes back for seconds!

 

Blueberry Crumble Bars

Ingredients
  

Crumb Topping

  • 1 cup (128g) all purpose flour
  • cup (66g) packed brown sugar
  • 3 tablespoons (38g) granulated sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon fine sea salt
  • 6 tablespoons cold, unsalted butter, cubed

Crust

  • 1 ½ cuts (191g) all purpose flour, sifted
  • ¼ cup plus 2 tablespoons (42g) powdered sugar, sifted plus extra for sprinkling on top
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ¾ cup (170g) unsalted butter, room temperature

Blueberry Filling

  • 3 ½ cups(454-510g) blueberries
  • 1 teaspoon lemon juice
  • cup (131g) granulated sugar
  • 2 teaspoons cornstarch

Instructions
 

Crumb Topping

  • In a medium-sized bowl, whisk together the flour, brown sugar, granulated sugar, cinnamon and salt until well combined. Work the butter into the flour mixture with your fingertips, until it looks sandy, with no large pieces of butter remaining. Press the mixture together to form chunks. Set aside in the refrigerator until ready to use.

Crust

  • Preheat the oven to 350ºF (180ºC). Line an 8-inch square baking pan with parchment paper, overlapping the ends a couple of inches. These will be handles to lift the bars out of the pan.
  • In a medium-sized bowl, whisk together the flour, powdered sugar, baking powder and salt until well combined. In a large bowl, beat the butter until smooth. Add the flour mixture and beat just until combined.
  • Press the dough evenly into the baking pan. Bake until the surface looks light golden brown, about 15-20 more minutes. Meanwhile, prepare the filling.

Blueberry Filling

  • In a large bowl, toss the blueberries with the lemon juice. Mix in the sugar and cornstarch. Pour the blueberry mixture over the warm crust. Top evenly with the crumb topping. Return the pan to the oven and continue baking until the topping is golden brown and the filling starts to bubble, about 28-33 minutes. Let cool completely before removing the bars from the pan. Sprinkle with powdered sugar.

Caramel Apple Blossoms

Whether you call them apple blossoms, apple dumplings, apple roses or mini apple pies, these are cute, delicious little apple pastries. I made them because I was craving apple pie, but I didn’t have enough apples to bake one. I didn’t invent them, and I don’t know who did, but I’ve had frozen ones and I’ve seen them on restaurant menus. I thought it would be fun to make them, and it was! I could’ve just put some pie dough in muffin cups and made quick little pies, but flower shaped things automatically get extra points for cuteness. And if you know me, you know I love my cute bakes!

Caramel Apple Blossoms

Servings 12 blossoms

Ingredients
  

Topping

  • 3 tablespoons (38g) packed brown sugar
  • 3 tablespoons (15g) quick oats not instant oats
  • 1 tablespoon (21g) all purpose flour
  • 1 dash fine sea salt
  • 1 tablespoon (14g) unsalted butter, melted
  • teaspoon ground cinnamon

Blossoms

  • 2 cups (198g) peeled, cored diced apples 1/4-inch pieces
  • ½ teaspoon lemon juice
  • ¼ cup (50g) packed brown sugar
  • 2 tablespoons (25g) granulated sugar
  • 1 ½ teaspoons all purpose flour
  • ½ teaspoon ground cinnamon
  • teaspoon fine sea salt
  • 2 crust unbaked pie dough , purchased or homemade
  • egg wash 1 egg whisked with 1 tablespoon of water
  • ¼ cup (82g) caramel sauce, purchased or homemade

Instructions
 

  • In a medium-size bowl, mix together all of the topping ingredients. Set aside in the refrigerator until ready to use.
  • In a large bowl, toss the apples with lemon juice. Add the brown sugar, granulated sugar, melted butter, flour, cinnamon and salt to the apples. Stir until well combined.
  • Line a large baking sheet with parchment paper.
  • On a lightly floured surface, roll the pie dough to 1/8-inch thickness. Cut out twelve 5-inch blossom shapes*, re-rolling the dough scraps as needed.** Lightly mark a 2-inch circle in the center of each blossom. Make cuts between the petals to separate them, just up to the edge of the center circle. Top each blossom with about 2 generous tablespoons of apples.
  • Brush the dough petals with egg wash. Form blossoms by lifting and overlapping each petal 1/2-inch in a spiral pattern similar to a rose. Tuck the last petal under. Press the petals together to seal so the filling won't leak.
  • Top each blossom with a spoonful of topping. Place in the refrigerator to chill for 30 minutes to 1 hour. Don't skip this step. This will help the blossoms keep their shape.
  • Preheat oven to 375ºF (190ºC). Brush the blossom dough all over with egg wash. Wipe any drips off of the parchment paper. Bake until the crust is golden brown and filling is starting to bubble, about 23-28 minutes. Transfer the blossoms to a cooling rack to cool for a few minutes before serving warm or serve at room temperature. Drizzle the blossoms with caramel sauce.

**If you need to  re-roll your  pie dough scraps, press the scraps together, cover and let rest in the refrigerator for several minutes to help avoid shrinkage.

Blackberry Honey Butter

Blackberry Honey Butter

Ingredients
  

  • cup (57g) ripe blackberries
  • 1 teaspoon sugar
  • ½ cup (113g) unsalted butter, softened
  • 3 tablespoons (63g) honey
  • 1 pinch fine sea salt to taste

Instructions
 

  • Place the blackberries in a small bowl. Sprinkle with sugar. Let the blackberries macerate at least 30 min. then smash them with a fork. Drain off any excess liquid.
  • In a medium-size bowl, beat the butter and honey together until smooth and well combined. Add salt to taste. Fold the blackberries into honey butter. Transfer the blackberry butter to a covered storage container or spread it on plastic wrap and form it into a log. Refrigerate until ready to use. Store in the refrigerator for up to one week or freeze for up to three months.

Blackberry Cornbread

This sweet Blackberry Cornbread is super easy to make. It makes a delicious breakfast, brunch or side dish. It’s so good served with Blackberry Honey Butter. I love baking my cornbread in a cast iron skillet. It gives the cornbread a crisp, rustic crust. You can also use a cake pan if you prefer. (The baking time may vary.) Make sure not to over bake your cornbread since overtaking will dry it out. Use fresh, ripe blackberries when they’re in season. You can also use frozen blackberries or fresh or frozen blueberries. Skip the macerating step if you’re using blueberries or frozen berries.

Ingredients
  

  • ¼ cups (158g) AP flour, sifted (plus one tsp for the blackberriesAP flour, sifted (plus one tsp for the blackberries)
  • cup (132g) sugar
  • ¼ cup (35g) cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 2 large eggs
  • ¾ cup (170g) sour cream
  • ¼ cup (57ml) vegetable oil or neutral oil of your choice
  • 2 tablespoons melted butter
  • 1 ¼ cups (6 oz or 170g) ripe blackberries, divided (Cut large berries in half)

Instructions
 

  • Preheat the oven to 350°F (180°C). Grease an 8” cast iron skillet* or an 8” round cake pan.
  • In a large bowl, whisk together the flour, sugar, cornmeal, baking powder and salt.
  • In a separate bowl, whisk together the eggs, sour cream, oil and melted butter until smooth. Add the egg mixture to the flour mixture. Mix just until combined. A few lumps are okay. In a small bowl, gently toss one 1 cup (136g) of the blackberries with 1 tsp of flour. Gently fold the berries into the batter.
  • Transfer the batter to the skillet. Top with the remaining blackberries. Bake until the top is golden brown and toothpick inserted into the center comes out clean, about 35-43 min. Let cool in the pan 10 min. Serve with Blackberry Honey Butter** or honey if desired

Peaches and Cream Loaf Cake

Every peach season, I get excited by the abundance of peaches at my local farmers market and I end up buying way too many. So if you’re like me and you have ripe peaches sitting on your counter, turn them into peach purée. I love adding peach purée to my iced tea or adding it to desserts like this moist, tender cake. Peaches and Cream Loaf Cake

Ingredients
  

Cake

  • 1 ¼ cups (5 1/2 ounces) all purpose flour, sifted
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • teaspoon ground nutmeg, preferably freshly ground
  • 1 cup (7 ounces) granulated sugar
  • cup vegetable oil or neutral oil of your choice
  • 2 large eggs
  • 1 cup peach purée, divided (About 1 1/3 cups peeled, sliced peaches puréed in a food processor or blender)
  • ½ teaspoon pure vanilla extract
  • teaspoon pure almond extract

Icing

  • 2 tablespoons cream cheese, softened
  • 1 tablespoon unsalted butter, softened
  • 1 cup (4 ounces) powdered sugar, sifted
  • ¼ teaspoon pure vanilla extract
  • pinch fine sea salt
  • 1-2 tablespoons reserved peach puree
  • 2 tablespoons diced peaches

Instructions
 

Cake

  • Preheat oven to 350ºF. Line the bottom of an 8 x 4-inch loaf pan with parchment paper. Grease and flour the sides.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • Set aside 2 tablespoons peach purée for icing.
  • In a large bowl, beat sugar, oil, eggs, remaining peach purée and extracts until smooth.
  • Add flour mixture and beat just until combined.
  • Transfer batter to prepared baking pan. Bake until toothpick inserted into center comes out clean, about 38-45 minutes.
  • Let cake cool in pan for 10 minutes, then turn out onto a cooling rack to cool completely. Spread icing on cooled cake.

Icing

  • In a medium bowl, beat cream cheese and butter together until smooth.
  • Add powdered sugar, salt, vanilla extract and 1 tablespoon of peach purée. Beat until smooth. Add additional peach purée, if needed, until desired consistency is reached. Fold in diced peaches.

Cherry season is highly anticipated at my house. We love enjoying a bowl of fresh cherries during the summer. We also love fresh cherry desserts. These cute little hand pies are a family favorite. They have the most delicious fresh cherry filling, surrounded with buttery, flaky crust and topped with vanilla icing. The small size makes them perfect for sharing or taking them along in a picnic lunch. I like to make the crust and the filling the day before, which makes them come together quicker on baking day. I decorated mine with bright red maraschino cherries for the photo, but my favorite cherries to top them with are Italian-style maraschino cherries.

 

Cherry Cutie Pies

Ingredients
  

Pie Crust

  • 2 ⅔ cups (340g) all purpose flour, sifted
  • 2 tablespoons (25g) sugar
  • ½ teaspoon fine sea salt
  • ¼ cup (48g) vegetable shortening
  • ¾ cup (170g) cold, unsalted butter, cubed
  • ½ cup (118ml) cold ice water
  • 1 tablespoon (15ml) apple cider vinegar

Cherry Filling

  • 12 ounces (340g) fresh cherries, pitted, halved and stems removed (about 1 3/4 cups after prep)
  • cup (66g) sugar
  • 1 tablespoon (10g) cornstarch
  • teaspoon almond extract
  • Egg wash: 1 egg beaten with 1 tablespoon (15 ml) of water

Icing

  • 1 ¼ cups (150g) powdered sugar, sifted
  • ½ teaspoon meringue powder (optional)
  • 2-3 tablespoons (30-45ml) whole milk
  • ¼ teaspoon pure vanilla extract
  • 1 dash fine sea salt
  • Pitted cherries for garnish (optional)

Instructions
 

Pie Crust

  • In a large bowl, whisk together the flour, sugar and salt. Work the shortening into the flour with your fingertips until it's evenly dispersed throughout. Work the butter into the flour mixture, creating flat dime size pieces.
  • In a glass measuring cup, mix the ice water and vinegar together. Sprinkle the liquid over the flour mixture a little at a time, stirring until the dough comes together. You may not need all of the liquid depending on your climate.
  • Turn the dough out onto a lightly floured surface. Fold the dough over onto itself a couple of times. Do not overwork the dough. Divide the dough into 2 equal portions and form into disks. Wrap them in plastic wrap and refrigerate until firm, at least 2 hours or up to overnight.

Cherry Filling

  • In a medium-sized saucepan, combine the cherries, sugar and cornstarch. Simmer over low heat, stirring occasionally, until the cherries start to soften and the juices are thickened, about 5 minutes. Transfer the cherries to a bowl. Stir in the almond extract. Set aside to cool completely.

Icing

  • In a medium-sized bowl, whisk together the powdered sugar, meringue powder, 1 1/2 tablespoons (22ml) of milk, the salt and the vanilla extract. Add additional milk as needed to achieve the desired consistency. (If you decide to omit the meringue powder, you'll need less milk.)

Assembly

  • Preheat oven to 375°F (190°). Line a large baking sheet with parchment paper.
  • On a lightly floured surface, roll dough to about 1/8-inch (.3cm) thickness. Cut out 20-22 3-inch (7.6cm) rounds. Transfer half of the rounds to a baking sheet, placing them about 2 inches (5cm) apart. Using a slotted spoon, place the filling onto rounds to within 1/2-inch (1.3cm) of the edges. Using a small pastry brush or your finger, apply egg wash to the edges. Top with the remaining rounds. Press the edges to seal & crimp with a fork. Brush the pies with egg wash. Cut a small x in the top of each pie.
  • Bake until golden, about 18-24 min. Transfer the pies to a cooling rack to cool completely. Brush icing on the cooled pies with a pastry brush. When the icing is almost set, top the pies with pitted cherries if desired.

Meet Little Strawberry Charlotte. She brings romance with her wherever she goes. Whether it’s a tea party, a birthday celebration or a romantic dinner, you’ll gaze at her beauty and sigh. This lovely Charlotte has luscious strawberry mascarpone cream filling layered with lady fingers and topped with fresh strawberries. I used store bought lady fingers to make life easier but you can certainly bake your own if you wish. I typically make this in spring or summer when the weather is warm and strawberries are plentiful. But since my local stores start carrying an abundance of strawberries around Valentine’s Day, I thought it would be a perfect time to make this pretty little Charlotte.

Little Strawberry Charlotte

Ingredients
  

Simple Syrup

  • cup (67g) granulated sugar
  • cup (78ml) water
  • ½ teaspoon strawberry or vanilla extract

Strawberry Charlottte

  • 12 ounces (340g) strawberries, hulled and sliced about 2 cups after slicing
  • ¾ cup (150g)) granulated sugar
  • ¼ cup (59ml) cold water
  • 1 tablespoon unsweetened gelatin powder
  • 1 teaspoon pure strawberry extract
  • ½ teaspoon pure vanilla extract
  • 1 ¾ cups (397g) mascarpone cheese, softened
  • cup (156ml) cold heavy whipping cream
  • 28 ladyfingers
  • 10-12 fresh strawberries for garnish
  • Clean pesticide free rose for garnish optional
  • Clean ribbon for garnish

Instructions
 

Simple Syrup

  • Combine the sugar and water in a small saucepan over medium-low heat. Heat and stir until sugar is dissolved. Do not boil.
  • Remove from heat and transfer to a small shallow bowl or dish wide enough to dip the ladyfingers. Stir in the extract.

Strawberry Charlotte

  • In a blender or food processor, purée the strawberries. Pass through a mesh sieve to strain out the seeds.
  • In a medium-size saucepan, combine the strawberry puree and sugar. Cook over medium heat until the sugar is dissolved, about 3-5 minutes. Remove from heat. Set aside two tablespoons of the strawberry purée mixture then cover it and refrigerate until ready to use.
  • Place the water in a small bowl and sprinkle with gelatin powder. Whisk together and let sit until dissolved, about 5 minutes. Add the gelatin mixture to the warm strawberry purée mixture and whisk until thoroughly combined. Set aside to cool.
  • In a large bowl, beat the mascarpone cheese with an electric mixer on low speed, until smooth. Add the strawberry purée mixture and the extracts. Beat just until well combined.
  • In a separate large bowl, whip the heavy cream with an electric mixer on medium-high speed until medium peaks form, being careful not to over whip. Fold the whipped cream into mascarpone mixture.
  • Slice one round end off of 16 ladyfingers. Dunk them briefly in the simple syrup then line them up along the inner sides of a 7-inch by 3 inch deep springform pan.* Typically you would line them smooth side in facing the filling, but I placed mine smooth side out which gives a smooth look on the outside and it makes removal from the pan easier. (You can also line the bottom of the pan with a cake board** if you don't want to serve the dessert from the base.)
  • Line the bottom snuggly with ladyfingers, cutting to fit where necessary. Top with half of the filling, about 2 cups. Then top with a layer of ladyfingers, cutting to fit. Top with the remaining filling. Smooth the top with a small offset spatula. Cover with plastic wrap and chill in refrigerator at least 4 hours.
  • Carefully remove the springform pan ring from the base. Separate the base from the cake board, if using. Garnish with fresh strawberries. Brush the strawberries with reserved strawberry purée mixture. Tie the ribbon around the finished Charlotte.

Lemon Scones

Yellow is the color of happiness and sunshine. These adorable Lemon Scones will bring you a burst of lemony brightness even on the grayest day. The pretty, vibrant yellow sparkling sugar adds a pleasant crunch to the tops. It’s a nice contrast to the soft, tender interior of the scones. These little gems would shine on any breakfast or brunch table. I served them with blueberry jam and green tea, which was so delightful, I’m still smiling.

Ingredients
  

Lemon Scones

  • 1 ¾ cups (223g) all purpose flour, sifted
  • 1 tablespoon baking powder
  • ½ teaspoon fine sea salt
  • ¼ cup (50g) sugar
  • 7 tablespoons (99g) cold, unsalted butter, cubed
  • Zest of 2 medium lemons
  • cup (156ml) cold heavy cream plus more for tops
  • 2 tablespoons (30ml) lemon juice
  • Yellow sparkling sugar*

Icing

  • cup (40g) powdered sugar, sifted
  • 1 teaspoon heavy cream
  • 1-2 teaspoons lemon juice

Instructions
 

Lemon Scones

  • Preheat the oven to 375ºF (190ºC). Line a large baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt and sugar until well blended
  • Work the butter and lemon zest into the flour mixture with your fingertips or with a pastry blender until pea size chunks form.
  • Stir in the heavy cream and lemon juice until a shaggy dough is formed. If your dough seems too dry, you can add 1-2 more teaspoons of heavy cream.
  • Turn the dough out onto a lightly floured surface. Fold the dough over onto itself a couple of times. Do not overwork the dough.
  • Pat or roll the dough into an 8-inch round, about 3/4-inch thick. Cut out rounds using a 2" or 2 1/4" inch round cutter.**
  • Place the scones about 2 inches apart onto the prepared baking sheet. Brush the scones with heavy cream. Sprinkle generously with sparkling sugar.
  • Bake until the edges are golden brown, about 16-19 minutes.
  • Cool completely on a wire rack. Decorate with icing.

Icing

  • In a small bowl, whisk together the powdered sugar, heavy cream and enough lemon juice to form a stiff icing.
  • Transfer the icing to a piping bag or a plastic zip bag. Snip off the tip of the bag. Pipe lines in a spoke pattern onto the scones.

Lemon Blueberry Cloud Cookies

Once, some time ago, I made some soft, melt-in-your mouth cookies and posted them on the internet. A viewer got triggered and insisted that cookies must be crunchy. I have to disagree! Cookies can be crunchy, crisp, soft, chewy, sandy or anything your heart desires. These soft, pillowy cookies are light and airy like little clouds. They could almost be called little cakes. The texture is similar to whoopee pies, but not as sticky. They’re delightfully delicious and have been well-loved by my family for two generations. They’re perfect for a spring teatime treat or alongside a glass of lemonade at a picnic.

Lemon Blueberry Cloud Cookies

Ingredients
  

Cookies

  • 2 cups (255g) all purpose flour, sifted
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (240g) ricotta cheese, room temperature
  • Zest of 1 large lemon
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (142g) blueberries plus extra for the tops

Icing

  • 1 ½ cups (181g) powdered sugar, sifted
  • 1 tablespoon (14g) unsalted butter, melted
  • 1 dash fine sea salt
  • 2-3 tablespoons (30-45ml) lemon juice

Cookies

  • Preheat the oven to 350ºF (180ºC). Line two cookie sheets with parchment paper.
  • In a medium-size bowl, whisk together the flour, baking powder and salt until well combined.
  • In a large bowl, beat the butter, with an electric mixer on medium speed, until smooth Add the ricotta cheese, sugar and lemon zest. Beat until well combined. Beat in the egg and vanilla until incorporated. On low speed, gradually mix in the flour mixture, just until combined. Fold in the blueberries.
  • Place rounded tablespoon-size portions of dough about 2 inches apart onto the cookie sheets. Top the cookies with additional blueberries. (If your cookie dough is sticky and hard to work with, refrigerate it just until it's easier to work with, about 30 minutes to 1 hour.)
  • Bake until the bottom edges of the cookies are lightly browned, about 11-13 minutes. Transfer the cookies to a cooling rack. Top the cooled cookies with icing. Best eaten the day they're made.

Icing

  • In a medium-size bowl, whisk together the powdered sugar, melted butter, salt and 1 tablespoon (15ml) of lemon juice until well combined. Add additional lemon juice as needed to achieve the desired consistency. Whisk until smooth.

We’ve all heard our parents telling their childhood stories of walking miles to school and suffering worse hardships than we ever had to. My mom used to tell me stories like that, but she had a sense of humor, so her stories were always fun to listen to. She used to tell me about her friend’s mother, who would make big, delicious oatmeal cookies. My mom would trade her baloney sandwich nearly every day to get one of those cookies from her friend. She reminisced about those cookies so much, that I set out to make her some when I learned to bake. She and my grandmother would taste test batch after batch of my cookies over the years. I have probably baked enough oatmeal cookies to circle the earth. Okay that’s an exaggeration, but seriously I have baked quite a few. Of all the oatmeal cookies I’ve baked, these are one of my favorites!

Most of the time when you see fruit added to an oatmeal cookie, it’s dried fruit, like raisins or cranberries. That’s mostly because if you just dump fruit into your cookie dough, the fruit releases water, leaving soggy spots in your cookies. To solve that issue, for this recipe, I macerate the blackberries before baking. The purple blackberry juice that’s released from the berries is used to make a beautiful lilac icing to drizzle over the cookies.

Blackberry Oatmeal Cookies

Ingredients
  

Brown Butter

  • ½ cup (4oz or 113g) unsalted butter

Macerated Berries

  • 2 cups (about 8-10 oz or 227-283g) fresh blackberries Cut large berries in half
  • 2 tablespoons (25g) granulated sugar

Oatmeal Cookies

  • 1 ¾ cups (7 7/8 oz or 223g) all purpose flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • ½ cup (4 or 113g) unsalted butter, softened
  • 1 ¼ cups (8 3/4 oz or 250g) packed brown sugar
  • 2 large eggs
  • 1 ½ teaspoons pure vanilla extract
  • 3 cups (10 oz or 283g) quick oats Not instant oats

Icing

  • ¾ cup (3 oz or 85g) powdered sugar, sifted
  • 1 tablespoon heavy cream
  • 2-3 tablespoons reserved juice from blackberries

Instructions
 

  • In a small, light colored saucepan, melt 1/2 cup (4 oz or 113g) of butter over medium heat, stirring occasionally, until deep golden and fragrant. Keep a close eye on it. It can go from toasted to burned very quickly. When you see brown particles form, remove from heat and immediately transfer the butter, including the particles, to a small bowl. Refrigerate until solid, about one hour.
  • Place the blackberries in a medium-size bowl. Sprinkle with granulated sugar and toss to coat. Let sit for 30 minutes until the berries release their juices.
  • Drain the blackberries and reserve the juices.
  • Preheat oven to 350ºF (180ºC). Line two large cookie sheets with parchment paper.
  • In a separate medium-size bowl, whisk together the flour, baking soda, salt and cinnamon. Set aside.
  • In a large bowl, beat the brown butter, softened butter and brown sugar until light and fluffy.
  • Add the eggs and vanilla extract in three separate additions and beat until well combined.
  • Stir in the flour mixture just until combined. Stir in the oats just until combined. Gently fold in the blackberries.
  • Scoop 1/4 cup sized portions of dough, about 2 inches apart, onto the prepared cookie sheets. *I used a #16 2-ounce scoop.
  • Bake until the cookie tops are set and the edges are golden brown, about 13-15 minutes. Transfer the cookies to a cooling rack to cool completely.
  • Pass reserved blackberry juice through a sieve to remove the seeds.
  • In a small bowl, whisk together the powdered sugar, heavy cream and one tablespoon of the reserved blackberry juice until smooth. Add more blackberry juice, a little at a time, until the desired consistency is reached. Drizzle the icing over the cooled cookies.
